Some of my achievements are unlocking properly, others are not. I have bred at least 75-100 cows before the "Repopulation" achievement opened. Other achievements that I have completed but that have not opened yet are: Acquire Hardware, Delicious Fish, Diamonds, The ??? directly above Diamonds, the ??? when creating an enchanting table, the ??? when mining obsidian, and the achievement for crafting bookshelves.

All those achievements are after Hot Topic (crafting a furnace) which I have crafted multiple furnaces and that achievement has not unlocked either. I would attach in-game screenshot files but I cannot seem to find where they are saved after being taken.
