Structure Blocks can save entities and their NBT data but it does not save their scoreboard data.

Reproduce:
Create a structure with an entity in it.
Use /scoreboard to give that entity a score for something
Save structure
Load structure
The new entity that is created upon loading the structure does NOT have the score that was given to the original entity
