Upon upgrading from 1.14 to 1.14.1 villagers will not accept new professions. Existing villagers will not regenerate from their workstation and using /data get entity show's that they have no memories (including that of their workstation coordinates).

Villagers spawned in villagers are nitwits and although they will take a profession when a workstation is placed beside them, they will not forget the profession even if said workstation if removed (even immediately).
