Would be great if there was a server setting for semi private servers of just your buddies to say dogs cant attack humans at all.

I've done some changes now (for 1.6.2). First of all, wolves weren't able to hurt horses at all previously, which they can do now. However, in order to stop accidental kills of family members, you can now tell wolves to stop attacking by sitting them down (previously they would still remember the target and continue the attack).

Yes, if you attack her or she attacks you.

Are the wolves attacking my traveling companion expected behavior ?

Wolves can only deal damage to what they're targeting, so in this case the wolf was trying to kill your wife, not your wife's horse.

This is still happening in 1.6.1.

Not sure if the horse hurt the dog or the horse somehow hurt me, but on the vanilla 1.6.1 server, my wife was on a horse, as was I. Then my wolves attacked her horse but of course she was on it and took all the damage. She died.

So definitely not fixed.

This is still happening with untamed horses. The dogs try to attack but nothing happens. They just kind of push it around
