you missed the bar when releaseing bees but no beekeeper.. 
beekeper trades should be based on inventory from harvesting honey and honeycomb
give them some sheers they get  comb.. give them some bottles they gather honey . 
and then . and only then they will  sell combs  honey or blocks.. based on inventory.
they could also be tought to use campfires or have a portable smoker to calm the hive or a random bee that is angry.. 
if they dont have tools perhaps they will anger a hive.. 

please also fix villager pathing so they dont self harm unless panicked .. 
or are walkign in complete darkeness ( ie light level below 5 at night)
