If you spawn a piglin in the overworld with a crossbow and it zombifies, it will keep the crossbow, however it will try to use melee attacks when aggrovated instead of using the crossbow. Skeletons can use bows and are undead mobs, and it doesn't make sense that zombie piglins cannot use crossbows.
