While starting Minecraft initially and playing windowed the game works as intended.
After switching Minecraft to Fullscreen, the game still runs in the background but cannot be opened. The screen will flash black and then immediately minimize when clicked or attempted to be maximized in any way. While trying to maximize the game in Task Manager the same result will occur. I am even able to hover over the Minecraft icon to see the game running and the screen working as intended, though still while trying to click to open the game it flashes black and goes back to minimized.
After many hours tinkering with this I feel as though this has something to do with the operating system or the 2560x1080 monitor, but I have only found one other case like this from five years ago that got no help.
The only way to reset this that I have found is to change the option of Fullscreen in the game files to "false" (to window the game upon launch) or to delete and reinstall the game.
