Very likely a feature request, but you cannot specify any NBT data into those items, which makes me believe this is a bug/oversight.
For example:
Try to add NBT tags to

/scoreboard objectives add Test minecraft.used:minecraft.potion

 It doesn't let you.
You cannot for example have a score that only works with speed potions.
