Fletcher houses within villages have a loot table for chests that contains eggs. However, these eggs may not match with the biome the village is spawned in. I would expect fletchers to have eggs matching the chickens that would spawn in the same biome.

Steps to reproduce

1. Run /place template minecraft:village/taiga/houses/taiga_fletcher_house_1, a structure template meant to be generated in cold biomes
2. Open the chest inside the placed house
3. Observe that the chest contains eggs instead of the expected blue eggs (or repeat if there are no eggs)
