      The problem in a nutshell: Read the title. In Minecraft, if an item NBT tag is too long, it will scale out of the screen and the only fix is to scale the screen to a ridiculous size (e.g. 1680x200). As far as I'm concerned, this affects all 1.8 versions of Minecraft. Evidence provided in the pictures.
