How does someone change their Minecraft version?

      After the new update, my friend and I are no longer able to join each other's servers. With the update, mine went to 1.16.100, and hers went to 1.16.40. Is there a way to change what version I am on? If so please help me. I'm not sure if this is a bug update or not, but if it is I hope it gets fixed.
