Pressing space again while climbing a scaffolding will get you in the Elytra Flying animation. You can still climb the scaffolding really slowly. You can reset it by stop pressing space or getting out of the scaffolding.

Steps to replicate:
1. Build a tower of scaffolding.
2. Equip an Elytra.
3. Climb it.
4. Release space and immediately hold space again.
