Okay, so, these are multiple things that I can split up into different reports if that's preferred.
1) the new villager that I got from breeding two cured zombie villagers will not take a profession. I have tried multiple times with different work tables and it does not connect with them. It is shown in the back of now photo next to a lectern and none of my other villagers have the librarian profession either and are not connected to that lectern.
2) The villagers who I have cured from zombies have automatic professions which I cannot change. They also refuse to connect to the workstations of their profession so that they can restock. I have moved one (a cleric) into the middle of the ocean, away from any stations to show this.
