We are using Minecraft:EE 1.7.1 (Education Edition - There was no specific option for it above)
When we change the texture for the armor_stand it is not reflected in game. I keeps displaying the vanilla texture. The texture name is correct, and the texture is using the same image as original, just a smear of color on it. However, if we change the texture inside the vanilla resource pack inside the application Contents (Mac) then it displays for a minute and then the game crashes. It appears that the armor_stand model is not connected to the Resource Pack texture correctly.
ADDITIONAL ISSUE THAT IS RELATED
When we download the official Resource Packs from https://minecraft.net/en-us/addons/, the game crashes on world loading (manifest.json is correctly configured). It appears that the standard Bedrock Resource Packs are incompatible with the latest Minecraft:EE (I tried a few months ago and it worked fine). However, other companies have successfully made Resource Packs for worlds that have been posted up in the new Library feature (awesome btw).
I have tested copying the vanilla Resource Pack from inside the Contents of the application (OSX), and it does work. However, this seems like a bit of a hack.
Could you please advise us on how to structure the custom Resource Pack correctly, supply a template, or confirm that copying from vanilla Resource Pack is the correct process.
