Since the recent patch to minecraft 1.11 none of the newly bred villagers i have created to replace villagers which despawned have taken on a profession.  
They adopt beds and seem to be able to assign themselves to the village bell but none of the working blocks.  Essentially they are all spawning as nitwits but without the skin.,

Note that this is after they have matured into grown ups.
