So, after just updating to version 1.12.0, a little under two days ago, the game has repeatedly crashed after at least an hour or so (I haven't timed it) numerous times. While chunk loading has been improved, and framerate has become more stable, this is the first update I've seen where the game frequently crashes.

While it does so regardless of whether you're connected to someone on multiplayer or not, hosting a world with multiplayer enabled, even if you are the only person in it, dramatically increases the rate at which crashes occur. When this happens, if you try to start the world up on Multiplayer again right after the crash, it will often crash again.

This has seemingly been mitigated, at least for me, by starting the world with multiplayer disabled.

Crashing does occur when on Realms, or other peoples worlds, even when cross platform, but it takes several hours before it happens in my experience.
