Since the latest update, mobs (skeletons and zombies) are not spawning with armor or handheld items at all.  I have a mob grinder and zombie dungeon spawner set for collection, and after a few weeks, have not collected a single item beyond standard drops (rotten flesh, bones, arrows and standard used bows).  I am on Easy, though I did not think that mattered.
