      THE GLITCH

Whenever you are running in a one block tile of water and then start crouching immediately, you regain full speed, as if you are still running. This makes your shield, if you are even holding one, glitch into your leg, too. I can't really provide the video of myself showcasing it, as the file it too large, but I can provide instructions of how to preform it. It's really quite simple.

      HOW TO PREFORM

      1. Find or build an area of water that is one block deep,

      2. Get into the water and start sprinting. This won't cause you to swim due to the water being only one tile deep.

      3. Once you have reached full speed, let go of the sprint key and immediately press down the crouching key. Your character will now be crouching and moving at the same speed as if they are sprinting in the water.

      EXTRA NOTES:

I have done some texting and here are some things to keep in mind.

      1. The speed seems to go back to normal whenever leaving the water, regardless of what way you're leaving it. (Except in note #4.)
      2. The speed also goes back to normal if you were to stop moving and then start moving again.
      3. You are indeed in the "Shifting state" whenever this glitch occurs. I tested this by putting magma under the player and, as expected, the magma did not hurt me.
      4. If command blocks replace the block below you with soul sand, and the air above you with water, you will enter the swimming state and go to the surface, however, when you reach the top and return to land, still holding the crouching key, you enter a strange state where you are running on land while holding the crouch key. In this state, if you stop and then start again, you will still regain running speed after a complete stop.

That is all the testing a was able to do. I hope you can find a solution to this soon. I believe this glitch was also in the previous version of Bedrock, but I did not know these forums existed at that time.
